Valentines Day Marry Me Gnocchi

Plus, the creamy white wine butter sauce with crispy sausage feels fancy without all that extra work.

Ingredients

  • 1 tbsp olive oil (for cooking)
  • 1 pack fresh sage
  • 2 Italian sausage, casing removed
  • 1/4 tsp red pepper flakes
  • 1 tsp honey
  • 2 tbsp butter (adjust to taste)
  • 1/2 cup white wine
  • 1/2 cup chicken broth or 1/2 cup water with dissolved bouillon
  • Salt and pepper, to taste
  • 1/2 cup peas (fresh or frozen)
  • 1 package gnocchi
  • Grated Parmesan

Directions:

  1. Crisp the Sage:
    • Heat olive oil in a medium pan over medium-high heat.
    • Pick off about half of the sage leaves from the stem and fry them whole in the pan for 2-3 minutes, until crispy.
    • Mince the remaining sage and set aside for later.
    • Remove the crispy sage leaves from the pan and set aside for garnish.
  2. Cook the Sausage:
    • In the same pan, add a little more olive oil and turn up the heat.
    • Remove the casing from the sausage and crumble it into the hot pan.
    • Cook, breaking it up into small pieces, until browned and crispy, about 5-7 minutes.
    • Stir in red pepper flakes and honey.
    • Remove half of the crispy sausage for garnish and set aside. Keep the rest in the pan.
  3. Make the Sauce:
    • Lower the heat and add butter to the pan. Once melted, add the chopped sage and sauté for 1-2 minutes.
    • Pour in the white wine and let it reduce by half, about 3-4 minutes.
    • Add chicken broth (or water with dissolved bouillon), salt, and pepper to taste. Let the sauce reduce further for about 7 minutes.
  4. Cook the Gnocchi:
    • While the sauce is reducing, cook the gnocchi according to the package instructions (usually 2-3 minutes in boiling water). Undercook slightly as it will finish cooking in the sauce. Reserve some pasta water before draining.
  5. Combine:
    • Add the peas to the sauce.
    • Add the cooked gnocchi to the pan along with a splash of reserved pasta water to help thicken the sauce and coat the gnocchi.
    • Cook on low heat, stirring gently, and sprinkle in Parmesan. Let the sauce thicken and coat the gnocchi, about 3 minutes.
  6. Finish:
    • Plate the gnocchi and garnish with the crispy sausage, sage & parmesan.
