Sautéed Figs & Goat Cheese Crostini

Sweet, salty, creamy, and crispy—this crostini has everything you want in an appetizer. Caramelized figs, tangy goat cheese, and delicate prosciutto come together on toasted baguette slices for a bite that’s both indulgent and refined. A drizzle of honey and a sprinkle of fresh basil take it over the top, making it an unforgettable addition to your Valentine’s spread.

Ingredients:

  • 1 package of prepared polenta (about 18 oz)
  • 1 tablespoon olive oil
  • 1/2 pound mushrooms (cremini or button), sliced
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (like Chardonnay, Pinot Grigio, or Sauvignon Blanc)
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish
  • Optional: grated Parmesan cheese for serving

Instructions:

1.  Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush lightly with 1 tablespoon of olive oil. Toast for about 8-10 minutes, flipping halfway, until golden and crispy. Set aside.

2.  Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the fig halves, face side down, and cook for about 2-3 minutes until caramelized and slightly softened. Flip and cook for another 1-2 minutes. Lower the heat, drizzle in some honey, sprinkle with hot pepper flakes, and cook for another minute or two.

3.  Spread a small amount of goat cheese onto each toasted baguette slice. Top with a piece of sautéed fig, then wrap or drape a piece of prosciutto over it. Garnish with a fresh basil leaf.

4.  Drizzle a little more honey over the crostini, sprinkle with salt and pepper, and serve warm. Enjoy the perfect blend of creamy, salty, sweet, and crispy in every bite!

Polenta Pucks with Mushroom Sauce

Polenta Pucks with Mushroom Sauce

Crispy polenta rounds topped with a creamy, savory mushroom sauce—this appetizer is pure comfort with an elegant twist. Perfect for cozying up with your favourite person, these bite-sized delights bring warmth and depth of flavor to your Valentine's Day spread.

Ingredients:

  • 1 package of prepared polenta (about 18 oz)
  • 1 tablespoon olive oil
  • 1/2 pound mushrooms (cremini or button), sliced
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (like Chardonnay, Pinot Grigio, or Sauvignon Blanc)
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish
  • Optional: grated Parmesan cheese for serving

Instructions:

1.  Preheat your oven to 425°F (220°C). Slice the prepared polenta into 1/2-inch thick rounds and arrange them on a parchment-lined baking sheet or lightly greased tray. Brush each polenta round lightly with olive oil.

2.  Place the baking sheet in the oven and bake the polenta rounds for 20 minutes, or until golden brown and crispy around the edges.

3.  While the polenta is baking, heat the olive oil in a large skillet over medium heat. Add the diced white onion and sauté for about 3-4 minutes, or until softened. Add the mushrooms and garlic and cook until the mushrooms release their moisture and become golden brown, about 5-7 minutes.

4.  Pour in the white wine, stirring to combine. Let it cook for 1-2 minutes to evaporate the alcohol and reduce slightly.

5.  Stir in the heavy cream and bring the sauce to a simmer. Let it cook for another 3-5 minutes until it thickens. Season with salt and pepper to taste.

6.  Once the polenta rounds are golden and crispy, remove them from the oven. Spoon the creamy mushroom sauce generously over each polenta puck. Return the baking sheet to the oven and bake for an additional 5 minutes, allowing the flavours to meld and the sauce to warm.

7.  Remove from the oven, garnish with fresh herbs, and sprinkle with grated Parmesan. Serve warm and enjoy!
