This blast chiller circulates cold air to safely and rapidly cool or freeze hot foods for storage without sacrificing the quality of the product. It’s perfect for restaurants and other commercial food service or retail establishments that require a reliable method to safely prepare “instant” or ready-to-eat meals, equip pre-cooked or pre-made foods for prolonged refrigerated storage, or even repurpose leftovers.
Simple and Intelligent Controls
Traulsen’s TBC13 blast chiller features the exclusive Epicon touch screen control panel with automatic and manual modes that make it incredibly easy to set and program. The automatic mode allows you to simply place one of the removable probes inside your hot food, close the chamber door, and wait for the chill cycle to start. After only 60 seconds, the cycle begins automatically without touching a single button. With manual mode, you can program the time and temperature of the chill cycle for specific recipe requirements. In the event that something is improperly set while in manual mode, the chiller will begin a chilling cycle within 5 minutes using default settings (if probes were used).
The Epicon control centre also includes a 90-day memory and on-board printer for storing and printing out complete HACCP documentation that can be accessed and referred to at any time.
High Quality Design and Efficient Operation
This reach-in blast chiller cycles between temperatures from 10°F to 14°F when in blast chill mode to rapidly cool products without freezing them. When freezing is required, it can cycle to temperatures as low as -25°F to effectively prevent bacteria from forming on freshly cooked products.
The unit has a stainless steel exterior front, sides, door, and top as well as a completely stainless steel interior. It’s insulated with a high-density CFC-free polyurethane insulation that’s been foamed in place inside both the cabinet and door.
The door to the blast chiller is self-closing with a stay-open feature that helps ensure it doesn’t get left open accidentally while also making it easier to load and unload large trays. The large reach-in cabinet boasts 18.3 cubic feet of storage space and comes equipped with 13 pairs of wire tray slides. Each set can accommodate either two 12” x 20” x 2.5” pans or one 18” x 26” pan per level, providing you with an extensive amount of space for flash freezing or flash cooling bulk products.
